Jude, try the spongecake recipe in this Choc Banana Cake here: http://suzettecooks.com/2010/02/chocolate-banana-cake/

I remember the cake's texture is quite spongy. Hope this is the right one you are searching for. ^_^

Oh! Sorry to hear that. I think you might be looking for chiffon cake recipe? Or look for angel cake recipe. That might be very fluffy enough (I guess your 'spongy' means fluffy/ airy)...

Jude: This should yield you about 3 slices of 7-8mm thick sponge cake slices, so the total thickness is not more than 3 cm. If you get that, then it should be fine. Fluffy means the mixture is not 'heavy', is kind of... err.. creamy. The egg mixture becomes light in color instead of the bright yellow before whipped. The slicing of the cake into 3 thin slices needs a bit more 'kungfu' I have to say. I failed so many times in the beginning, but slowly mastered it now. :)

Hi Suzette, I did this last weekend but I did not get the spongy texture..it was like too compact...what does it really mean by fluffy?I beat it for around 3 minutes and the mixture is still running..*sigh** I still failed to produce a good sponge cake..(:
