Vegetarian Baked Macaroni Cheese

Actually this version of baked macaroni is just so similar to the non-vegetarian type. What I do is just substitude the meats in the original baked macaroni cheese with sliced button mushrooms.

Ah! Also, in this version, I added some grated cheddar cheese as well. I think this gives the topping a better texture compared to purely mozarella cheese.

    Small Footprints: I tried a vegan version for this before, using toufu mixture in replacement of the cheese. Don’t quite like it, couldn’t get it right. Another version used nutritional yeast, but somehow very oily (too much of margarine, I guess). :(
    But then, I have other vegan recipes here, although not cheese supplements… :)

    I read in bbcgoodfood.com that you can substitute the meat with green lentils.

    Aiyu, do you know how to replace cheese then? I have been experimenting with some toufu recipes and nutritional yeast, but none taste close to cheese. The texture nutritional yeast might have that texture, and slightly close to the taste, but too oily…

    that I’m not sure, soy cheese maybe?

    Sigh! That’s the problem. Soy cheese is not widely available over here, but I think quite common in US. I tried making my own, using toufu. Tried so many recipes, never find one that is close enough…
