Tomatoes Fried Eggs

This is a very easy and cheap, but very refreshing and delicious dish. I like to choose this from mixed-rice-stalls. My friends and I liked to order this when we traveled to China too! You just won’t go wrong with this one.

Tomato fry egg

Recipe
Ingredients
2 medium size tomato
3 eggs
1 pip of garlic
1 tbsp oil for frying
Salt and pepper to taste

Method
1. Remove tomato skin if you don’t like it. Dice the tomatoes.
2. Crush and finely chop garlic.
3. Crush eggs in a bowl, lightly beat, add salt and pepper.
4. Heat oil in wok, saute garlic till fragrant.
5. Add in tomato, stir fry till tomato is soft.
6. Pour in the eggs, keep stir frying till the egg mixture is dry, fragrant and slightly brown.
7. Serve warm.

Fried Fish with Tomato and Plum Sauce

When I eat fish, I like it dry and crispy, and I can chew on the bones. Most of the time I treat fish dishes like snack! So, naturally when I fry, I make it this way – also following my mom’s usual cooking style.

But yesterday DH grumbled about the fish being too dry, then I remembered that his mother’s cooking style is completely different. She likes to use a lot of water and sauces, even with fried dishes.

So, I tried to experiment making some sauces to cover on my favourite fried garoupa fish (石斑/ sek-ban ==> hope I got the name right!). It turned out great! Children can eat a lot of rice with the sauce too. I think I start to get a good hang of this now. LOL!

Fry Fish with Tomato and Plum Sauce

Ingredients
2 medium garoupa fishes
1 large onion, wedged
6 tbsp tomato sauce
2 tbsp plum sauce
1 cup water
1 tsp tapioca powder

Method
1. Fry fishes and remove when cooked, set aside.
2. Remove oil and leave only about 1 tbsp.
3. Sautee onion at med until soft and semi transparent.
4. Dissolve tapiocca flour into the water, stir well.
5. Add tapioca water, tomato sauce and plum sauce into the wok.
6. Stir fry until the sauce thickened, pour onto the fishes. Serve hot.

How to Fry Fish Without Sticking to Wok?

Well, since early last year, I have been trying to reduce meat intake. I think I still cannot go complete vegetarian yet, so I am still eating fish.

Now that I cook myself, frying fish became a challenge to me. I have been having problems when fishes stick to the wok. Whether I grill, fry or roast my fish, a large chunk of meat would be wasted – torn off and stuck on the wok, at the end become charcoal.

Luckily I have 2 seefu (teachers) around, my mom and MIL. This time, it was MIL who told me this ‘secret’. Apparently, if you add a little salt into the oil before frying, the fish will not stick.

I immediately try it, and it works 100% of the time!

Not only it won’t stick to the wok, the salt also helps season the fish. So, with this method, I don’t even season or marinade my fish before frying!!

Pancake – Jamie Oliver style

I stumbled upon this so called Jamie Oliver’s American style pancake one day, and decided to give it a try.

I like it very much instantly! It is different from other pancakes, because it is more fluffy. Ian and Isabel wallopped all very quickly.

I chose choc chip as the filling/topping because my kids only like chocolate. :D They didn’t even want maple syrup although finally accepted it after I tried to persuade.

INGREDIENTS
3 eggs
4oz (115g) multipurpose flour
1 heaped tsp baking powder
5fl oz (140ml) milk
A pinch of salt

METHOD
1. Separate egg white from yolks.
2. Mix yolks, flour, baking powder and milk until smooth.
3. In a separate bowl, whisk egg white and salt until peaked.
4. Fold the white into the yolk/flour mixture.
5. Heat a non-stick pan on medium.
6. Pour some batter and fry for a few minutes until it starts to turn golden and firm.
7. Sprinkle some toppings on the uncooked side, and then turn the pancake.
8. Continue frying until both sides are golden.
9. Serve with maple syrup, chocolate syrup, butter, or anything you can think of!

Banana Pancake

I picked this recipe from here. A reader of Suzette’s Parenting & Breastfeeding Blog wrote to me and we chatted for a while, then she recommended this site for baby weaning food. Though my children are way passed the stages in this blog, I think this pancake may still be liked.

This pancake is actually not sweet, so my children don’t like it very well. But I quite like the ‘natural’ sweetness – coming from soy milk, banana and choc chips only. It is different from other banana bancake recipes, because it uses MASHED banana - easier for younger children.

I modified the recipe a bit, replaced milk with soy milk as I don’t drink milk (ahem, and soy milk is a lot cheaper, LOL!). I also replaced butter with olive oil – healthier? :D

INGREDIENTS
1 cup all purpose flour
1 cup whole-wheat flour
1 tbsp baking soda
2 tsp baking powder
1 tsp salt
2 tbsp sugar
1/2 tsp nutmeg
2 cups milk
1/4 cup vegetable oil
2 eggs
1 banana sliced

METHOD
1. Mix all dry ingredients in a bowl.
2. Stir in milk, oil and eggs, mix well.
3. Add sliced banana, mix well.
4. Fry in a non-stick pan until golden on both sides.
5. Served hot with cream, strawberry and maple syrup.

Cheesy French Toast

This is another recipe taken from Weaning Solid — Cheese French Toast.

Made this for my children’s 1st day to school this year. I added a lil’ sugar or it would be quite tasteless. The result was… yummy! No leftover. :D

Here is the recipe. Increase the amount according to the number of people you prepare this for. I triple this, coz I made this for DH, myself and 2 kids. Both of us usually eat 2 slices, and the kids 1 slice each. As usual, I have modified the ingredient a lil’ to suit my diet (no milk, butter).

Ingredients
2 slices of bread (cut out the sides)
1 egg
1 tablespoon of soymilk
1 tablespoon of grated Cheddar cheese
1 teaspoon of sugar (add more if you like it sweeter)
A sprinkle of pepper

Method
(1) Cut the bread into smaller pieces.
(2) Mix egg, soymilk and grated cheese in a bowl until well mixed.
(3) Soak bread in the egg mixture.
(4) Heat up oil in pan and fry the soaked bread till slightly brown.

Banana Chocolate Chips Pancake

Here is the Banana Chocolate Chips Pancake recipe:
Ingredients:
1 cup flour
1 cup soy milk
1 tablespoon olive oil
1 egg
1 large banana, mashed
1 handful of chocolate chips

Method:
(1) Mix soy milk, oil and egg.
(2) Add in flour and mix well.
(3) Stir in mashed banana and chocolate chips.
(4) Heat up non-stick pan and scoop about 2 spoons of the mixture to make one pancake.
(5) When bubbles appears, flip over but do not press the pancakes.
(6) After about one minute, remove pancakes from pan and serve.
